A few weeks ago I found a surplus of frozen peaches from last peach season hiding in our extra freezer. Immediately I knew I needed to make some delicious jam or a peach cobbler. I settled on the peach jam and boy was it a great choice. This jam comes together very easily and requires very little hands on time. That is my kind of recipe. :)
You just have to toss all the ingredients in a saucepan and let it simmer for about 20 minutes, or until thickened to your liking. About halfway through (10 minutes in) I took a potato masher and mashed up the peaches, so that the chunks were broken up and not quite so big. This will still be a chunky jam that goes great with just about everything.
Cinnamon Honey Peach Jam
- 4 c peaches, peeled and sliced
- 2 Tbsp honey
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 Tbsp chia seeds
- Add all the ingredients to a large saucepan.
- Bring to a boil, then turn down the heat and let it simmer for about 20 minutes. Halfway through take a potato masher and mash the peaches to break up the chunks so that they aren't so big. Continue to simmer until the jam is thickened to your liking.
- This will be a chunky delicious jam. Spread it on biscuits, pancakes, add to yogurt, smoothies or to chia seed pudding. The options are endless.
