Some of the simplest things in life are the best things, like this dark and white chocolate peppermint bark.  This bark has become a staple in our house during Christmas. I love it because it takes very little effort during a time when life is hectic.  I love doing all of the traditional holiday baking but it is nice to have a recipe in your back pocket that can be whipped up at a moments notice.  You know, in case all of the other goodies have been consumed and you have company coming over but not a lot of time to spare, this bark is sure to please.  It is also a great addition to holiday gift baskets.

Three ingredients is all you need to bring the essence of Christmas into your home.  For me the combination of chocolate and peppermint is to winter what pumpkin spice is to fall.  They just go together.  It fits, don't fight it.  Lets put it into Starbucks terms, Pumpkin Spice Latte at the turn of the first leaf and Peppermint Mocha at the first snowfall.  Oh the flavors!  Okay I am drooling, lets get to the recipe so I can go do some more taste testing!

Dark and White Chocolate Peppermint Bark

Ingredients:

10 oz good quality dark chocolate

10 oz good quality white chocolate

9 large candy canes

 

Directions:

1. Line a jelly roll pan with aluminum foil, set aside.  Melt the dark chocolate in a medium saucepan over low heat.  Stir constantly with a wooden spoon to prevent it from burning or sticking to the bottom of the pan.  Once the chocolate is melted spread it evenly on the jelly roll pan.  Don't spread it too thin or else it will break easily.  Transfer the pan to the freezer, let set for 15-20 minutes or until it has hardened completely.

2. Once the dark chocolate has hardened melt the white chocolate over low heat, stirring constantly with a wooden spoon.  Once it has melted set aside to let it cool a little {about 5 minutes}.  While the chocolate it is cooling put the candy canes in a quart size ziplock bag and seal.  Crush the candy canes with a rolling pin, leaving a few bigger chunks of candy cane.  Set aside 1/8 c - 1/4 c of the crushed candy canes.  Pour the remaining crushed candy canes into the white chocolate and stir until well mixed.

3. Remove the dark chocolate from the freezer.  Evenly spread the white chocolate over the dark chocolate.  Sprinkle the reserved crushed peppermint over the white chocolate, gently press the peppermint into the white chocolate.  Place in the freezer for another 15-20 minutes or until hardened.

4. Once the chocolate has hardened remove it from the freezer and transfer the bark to a cutting board.  Using a large, sharp knife, cut the chocolate into varying sizes of bark.
