roasted butternut squash and bacon wraps

Hello!  Welcome to Wandering Root.  If you are reading this, you are reading my very first blog post!  I am so excited to be sharing not only this recipe with you but all of my passions, which you will see as Wandering Root evolves.  I just want you, yes you, the reader to know how happy I am to have you here.  I look forward to the journey.  Now lets get onto the food!

One thing you should know about me, I like simplicity, especially when it comes to cooking.  Don't get me wrong, I love spending time in the kitchen and if I had all day I would spend it cooking up elaborate meals with appetizers, main courses, and lovely desserts, but I just don't have that time, much like you guys.  So most days of the year I choose simplicity.  Simplicity doesn't have to mean blah though.  Simplicity can and should be delicious too!  This dish is exactly that, simple and delicious, what more could you ask for?  Oh, and healthy too!  Now what else can you ask for?

First you dice up some butternut squash, red onion, and bacon, toss them on a jelly roll pan {a.k.a. a cookie sheet}, drizzle on a little oil and top with some fresh cracked pepper.  Pop them in the oven until the bacon is slightly crisp and the veggies are perfectly roasted.

Now all you have to do is toss the butternut squash mixture with some perfectly sweet cherry tomatoes and an avocado and there you have it, an easy weeknight dinner!  Sooo easy and oh so delicious!

I know you guys will love this recipe, not only for how easy it is to make, but because of the amazing flavors you get.  Bacon, avocado, and tomato is a popular flavor combination but then you add in the slightly sweet, warm, tender butternut squash and you are in flavor heaven!  So eat up and enjoy!

Roasted Butternut Squash and Bacon Wraps

yield:  serves 4


5 c butternut squash, diced

1 1/2 c red onion, roughly chopped

6 slices good quality bacon, chopped into 1" pieces

1 c cherry tomatoes, cut in half

1 avocado, diced

4 burrito sized tortillas {I used Organic Burrito Size Sprouted Wheat Tortilla}

coconut or olive oil

fresh cracked black pepper

sea salt



1. Preheat oven to 425 degrees fahrenheit.  Add butternut squash, red onion, and bacon* to jelly roll pan.  Drizzle with coconut or olive oil and sprinkle with fresh cracked black pepper.  Put in the oven for 15 minutes, then toss the butternut squash mixture and cook for another 5-10 minutes or until the bacon and veggies reach desired degree of doneness. 

2. Once the butternut squash mixture is done, remove from the oven and transfer to a large bowl.  Add the tomatoes and avocado and sprinkle with sea salt.  Toss everything together.

3. Warm tortillas, fill with butternut squash mixture, roll up and enjoy!


*Note: My bacon did not produce a lot of grease.  If yours typically does then cook the bacon separately.
