This salad has been a long time favorite in our household.  What initially surprised me about it was how great it tastes the next day.  So often when you are dealing with a salad that already has a dressing on it, the next day you are looking at a soggy, not so appealing salad.  Not this one.  I think it may be because the red onions are cooked in with the rest of the dressing and they soak up a lot of the liquid but somehow still manage to "dress" the salad perfectly.

Although it tastes great as soon as you make it, It may even taste better an hour or so after you actually assemble it.  So fear not if you need to make this ahead of time.  It will taste still taste awesome!

Earlier this week I went to make a chicken wrap and was struggling to figure out what else to put on it, then I stumbled upon the leftovers from this salad in my fridge.  A lightbulb goes off and I tossed it on top of the chicken.  Seriously amazing wrap.  So you are welcome, now I just gave you an idea for lunch or a light dinner!  Enjoy!

Spinach, Bacon and Egg Salad with Red Onion and Red Wine Vinegar Dressing

serves: 3-4

Ingredients

Salad:

5 c organic spinach

5 slices good quality bacon {cooked and chopped}

4 hard boiled egg {sliced & preferably farm fresh}

Dressing:

2/3 c red wine vinegar

1/8 c extra virgin olive oil

1/2 of a large red onion {thinly sliced}

 

Directions:

1. Make the dressing first.  Combine the red onion, red wine vinegar and extra virgin olive oil in a medium frying pan and cook over medium heat for 6 minutes.  You want the onions to be soft and quite a bit of the liquid cooked down.  Once you have finished the dressing remove the pan from heat and set aside to let it cool down so the it doesn't wilt the spinach.

2. Add the spinach to a medium size salad bowl.  Add the dressing and toss well.  Top with the bacon and hard boiled eggs.  Enjoy!

 

*Note: It may seem like there won't be enough dressing but rest assured the red onions and little bit of liquid that is left really will dress it well.
