You guys!  This ice cream is awesome!  It is perfectly and lightly sweetened and topped off with some amazing port and a little shaved chocolate.  It is perfection!  If you are used to overly sweet ice cream this may not be quite sweet enough for you but trust me when I tell you the added port drizzle will sweeten it even more and will taste so good!  I think it is amazing just on its own as well.  How do you feel about port?  Love it?  Hate it?  Never tried it?  I love, love, love port!  It took me a couple tries to like it but now it is my favorite treat or dessert paired with some dark chocolate.

I am not sure if it was the port that I originally tried or if I matured a bit and so did my taste.  I first tried it when we were living near Boulder and we visited some wineries in the area.  It was INTENSE, like taking a shot of whiskey.  At least that is what I thought at the time and I only remember the thought not the actual experience.  When we moved to Grand Junction we started drinking our way through all of the amazing wineries and was presented with port once again.  I am so glad that I tried it again because I fell in love, head over heals in love.  For this recipe I used one of my favorite ports from a winery right down the street from our place.  If you are in the area you should definitely hit up Two Rivers Winery and Chateau, it is a great winery!

Chocolate Ice Cream {Dairy Free!} with Port Drizzle

Serves: 4

Ingredients:

  • 2 cans full fat coconut milk, chilled
  • 3/4 tsp vanilla extract
  • 1/2 c unsweetened cocoa
  • 1/2 c coconut sugar
  • shaved chocolate
  • 4-8 Tbsp port

Directions:

  1. In a large bowl add the coconut milk, vanilla extract, cocoa and coconut sugar together.  Whisk until well mixed.
  2. Start your ice cream maker.  Add mixture and let run for 25-30 minutes.
  3. Eat right away for a soft serve ice cream or freeze for later use.  Remove from the freezer 10-15 minutes before serving to allow for it to thaw enough for easy scooping.
  4. When ready to eat, drizzle with 1-2 Tbsp port and top with shaved chocolate.  Enjoy!
