There is nothing like a really good kale chip, once you realize that it is in fact not like an actual chip.  Is that a bad thing?  Absolutely not.  I actually prefer these over regular chips, but that would not have always been the case.  I am just giving a fair warning that if you have been used to eating traditional chips these will taste nothing like what you have been used to.  They are amazingly delicious though, so don't be afraid to reach outside of your comfort zone and try them.

Besides, how can something so beautiful taste bad?  Look at those colors!  I am in love.  Another warning, if you have never made kale chips the smell of them or your house after they bake can be a bit, well, stinky.  No worries though, the smell does not reflect their taste.  I am in no way trying to scare you from trying them.  I am just telling you things I wish I had known when I first started making kale chips because I thought I was doing something wrong.  I wasn't, it is just the nature of the beast, they are a smelly veggie and that smell is only magnified when the kale baked.

The kale chip that I am most familiar with and tends to be the most popular recipe is quite simple.  Chopped kale, olive oil, and salt.  Then toss it in the oven until crisp.  While this is a fantastic and super easy way to make kale chips, sometime you just need something different. Something spicy.  That  is where this recipe was born.  I just needed some spice in my life one day.  The garlic and parmesan don't hurt either.  Not a bad combo, not at all.

I almost think this was a dangerous recipe to come up with.  I immediately inhaled 2/3 of the chips when they came out of the oven.  Water was a necessity too.  I really love spicy foods, so if you are unable to have spicy foods I would recommend scaling back on the red pepper flakes a bit.  This in now my go to kale chip recipe.  I can't wait to grow some in my garden so I can enjoy them more often.

Spicy Parmesan Garlic Kale Chips

Ingredients:

1 large bunch of organic kale

2 Tbsp packed grated parmesan

1/4 tsp crushed red pepper {use more or less depending on how much spice you like}

2 garlic cloves

sea salt

olive oil

 

Directions:

1. Preheat oven to 450 degrees fahrenheit.

2. Rinse kale and de-stem {do this by tearing kale off the stem or running a knife down the stem so the kale leaves fall off}.  Roughly chop or tear the kale into large pieces.  Place on a silpat lined or light greased cookie sheet.  Lightly drizzle the kale with olive oil and toss.

3. Place in the oven and bake for 10 minutes.  While the kale is baking grate the garlic with a microplane grater.  Place the garlic in a small bowl with the grated parmesan.  Add crushed red pepper.  Add enough olive oil to garlic mix to make it easily mix together {roughly 1/2 tsp}.  Don't add too much oil though, you don't want it to be runny.

4. After the kale has baked for 10 minutes, toss it and drop bits of the garlic mixture randomly over the kale chips {I formed small clumps and dropped it on the kale}.  Sprinkle kale with sea salt.  Return to the oven and bake an additional 5 minutes or until crisp.  Remove from oven and let cool.  Store in an airtight container.
