Mexican food has always been a favorite of mine but pregnancy has taken my love of Mexican food to whole new levels.  I usually favor more traditional Mexican dishes to the Americanized ones but I have eaten at Chipotle more times in the last 5 months than I have over the last 10 years.  You know what is really sad?  I have only eaten there about 5 times over the past 5 months, so as you can tell I really haven't eaten there much.  It is nothing against Chipotle, we just favor eating in far more than eating out.  What can I say, I love to cook and it is far easier on the wallet.  During the summer months there is nothing better than sitting on the back patio with Pandora set to the Big Head Todd and the Monsters station, a good bottle of wine, gourmet cheese and an amazing home cooked meal.  We just sit our there for hours, our bellies filled with good food, our ears filled with good music and the conversation and wine flowing.  Can't beat that.  I have a feeling that this summer that scene will be a bit different but it will still be amazing, just in a different way.  We can't wait!

Oh yes, back to this dish!  It was inspired by the burrito bowls that you can find at most Mexican restaurants.  This would be a great dish to make when you have to serve a crowd.  Just double or triple the recipe.  Put the beans, rice, cooked beef, salsa, roasted red peppers, cheese, sour cream, guacamole, shredded lettuce, and salted lime tortilla strips in individual bowls and set up a self serve buffet.  This way your guests can pick and choose what they want or don't want in their burrito bowls.  If you are feeling super ambitious you could add to the selection some chicken and an assortment of salsas.  You will be forever loved.

Beef Burrito Bowls with Salted Lime Tortilla Strips

serves 4-5 

Ingredients:

1 1/2 lbs beef stew meat

3/4 c Stubbs Beef Marinade

3 small chipotle chiles in adobo sauce

1 lg red bell pepper

3 - 4 c black or pinto beans {cooked & warmed}

3 - 4 1/2 c cooked brown or white rice

1 - 1 1/2 c salsa

4 corn tortillas {I used La Tortilla Factory ones}

1 lime

salt

additional toppings:  grated cheese, sour cream, guacamole, shredded lettuce

 

Directions:

1. Place stew meat in a glass bowl or a ziplock bag.  In a mini food processor or blender blend the chipotle chiles in adobo sauce until the chiles are finely minced.  Add the chiles to the Stubbs Beef Marinade and mix well.  Pour the mixture over the stew meat and let marinate at least 4 hours {I usually add the marinade to the stew meat first thing in the morning so it is ready for dinner that evening}.

2. Preheat oven to 375 degrees fahrenheit.  Thinly slice the red bell pepper and place on greased or Silpat lined cookie sheet.  Cook for 10 minutes, toss and cook for another 5 minutes or until they are soft and very slightly blackened.  Remove from oven and set red pepper slices aside.

3. Cut the tortillas into strips and place on the cookie sheet you used for the red pepper slices.  Drizzle with olive oil and place in the oven for 8-10 minutes or until they are crisp on the bottom side.  Turn tortilla strips over, drizzle with olive oil, then drizzle with juice from 1/2 lime and sprinkle with salt.  Cook for another 3 minutes or until both sides are crisp.  Remove from oven, drizzle with a little more lime juice and salt if needed.  Set aside.

4. Heat a skillet over medium-low heat.  Once heated, add the stew meat and turn occasionally.  Cook for 10-15 minutes or until your desired level of doneness is achieved.  Put some paper towel on a plate and place cooked meat on it.  Blot the meat to remove excess liquid.

5. Now it's time to arrange the bowls.  This is how I do it but feel free to do it however you prefer.  In a bowl place 3/4 - 1 cup of rice, top with 3/4 cup beans, 1/2 cup meat, 1/4 cup salsa, cheese, sour cream, guacamole, red pepper slices, tortilla strips and shredded lettuce.  Then I stir it up so that the rice, beans, and meat are coated with all the toppings.  Enjoy!
