I am back! I have been wanting to share this recipe for such a long time now but this baby has had other plans for us lately. I have definitely learned first hand that the last month or so of pregnancy can be a whirlwind. I am so envious of those women that have great pregnancies, baby goes head down, they go into labor and they give birth naturally. Don't get me wrong, we have been so incredibly lucky. The baby and I are both healthy, pregnancy has been for the most part easy and even with being 39 weeks pregnant tomorrow I still feel pretty fantastic, even in the heat.
So what has made it a whirlwind? The baby refuses or can't go head down. He or she is breech. What makes this so difficult is that so many doctors are refusing to deliver breech babies these days. We have been using a midwife at a birth center but she cannot deliver a breech baby so last week we had to switch to an OB, who wants to do a c-section. If it comes to that we will do that, because at the end of the day health is all that matters. However we are not giving up yet, we are still doing what we can do to get the baby to turn and of course having faith that mother nature will take its course and it will flip. This is not always easy, especially when a doctor is pressuring you into a c-section and getting irritated because you have questions about his process. While this can be intimidating or frustrating as times remember that you absolutely have the right to question your provider, at the end of the day you will be the one who has to live with the end result day in and day out.
The biggest reason I am divulging all of this is so that if somebody else is going through this right now, don't give up. Trust me, I am exhausted and frustrated and sometimes just throwing my hands up and giving in so that it is all finally over with sounds not half bad. However, I just keep thinking to the day that I will be so happy and proud that we stuck by our guns and fought tooth and nail for what we believed to be the best for us. No matter what the outcome I know that we can feel good because we stayed strong and stood up for ourselves. Also, remember that not everything goes according to plan and that is okay, in the end it will all work out. I must admit, I sometimes lose sight of this, but it really is true.
Enough serious talk, lets talk food! More importantly lets talk guacamole. I absolutely love guacamole. The problem is I am not always the best planner. Sometimes I want to make it so bad but seem to always be missing a key ingredient, cilantro. Heck sometimes I don't even have limes on hand. Whenever I would scour recipes for guacamole all the recipes I came across had these two things in them, which oddly made me believe guac could not be made without cilantro or limes. Well guess what, guacamole can taste amazing without either of these. This recipe is super simple and is a hit every time I make it. Of course if you have cilantro or lime juice you can throw those in, but if you are missing them know that you can still have some deliciousness without them.
Smooth and Spicy Guacamole
2 large ripe avocados
1/2 medium white onion
1 large jalapeño, stem removed
1/4 tsp kosher salt
1 garlic clove
juice of 1/2 lime
1-2 Tbsp cilantro
1. Place jalapeño, garlic clove and onion in a food processor. Process until everything is finely chopped.
2. Cut the avocados in half, spoon out and place in the food processor. Add salt and lime juice if using. Process until smooth, scraping down the sides.
3. Taste and add more salt if needed. Add in cilantro if using and process until it is mixed in.
4. Refrigerate for 4 hours.
