Longest dessert title everrrrr.  There was just no way to shorten it though.  It is exactly how it sounds, a peach crisp topped with a chocolate chip oatmeal cookie.  At first I thought this may be a little over the top but after trying it, no way, it is awesome!  Now if I ate it every night then it may be over the top but since it is a dessert that can only be enjoyed a couple times a year then I will enjoy it because oh my goodness it is heaven!

Where we live the peaches are quite famous and absolutely delicious.  They even have a festival dedicated to the oh so lovely peach.  So of course when I was thinking up an amazing dessert I had to feature the peach.  It is similar to the Nectarine and Cherry Crisp that I posted a few weeks ago but this version involves a cookie with chocolate.  I debated adding chocolate but at the last moment decided what the hell, everything is better tasting with chocolate.  Good decision.  Chocolate covered fruit is one of my favorite indulgences, so the added chocolate gave my mouth three different desserts, peach crisp, chocolate chip oatmeal cookie and chocolate covered fruit.

heavily adapted from:  Nectarine and Cherry Crisp + Single-Serve Deep Dish Chocolate Chip Cookie

Peach Chocolate Chip Oatmeal Cookie Crisp

serves:  2-3

Ingredients:

2 lg peaches, peeled and sliced

2 tsp cornstarch

1 Tbsp coconut or turbinado sugar

1/2 tsp vanilla extract

Chocolate Chip Oatmeal Cookie:

1 1/3 Tbsp coconut oil

1 1/3 Tbsp maple syrup

1 1/3 Tbsp coconut or turbinado sugar

3/4 tsp vanilla extract

1/4 tsp baking powder

3 Tbsp Gluten Free rolled oats

6 Tbsp Gluten Free rolled oats, ground to oat flour

1 Tbsp almonds, ground to almond meal

1 Tbsp almond butter

1/8 tsp cinnamon

1/4 tsp coarse sea salt

1 tsp chia seeds

1 1/2 Tbsp dark chocolate {soy & dairy free}

 

Directions:

1. Preheat oven to 375 degrees fahrenheit.

2. Coat a small/medium bowl {725 ml} ceramic or glass baking dish with cooking spray {I use olive oil or coconut oil}.  Sprinkle with 1 tsp cornstarch in the bottom of the dish.

3. In a medium bowl combine 1 tsp cornstarch, coconut sugar, vanilla extract, peaches and toss until well mixed.  Add to the baking dish coated with cornstarch.

4. In medium bowl mix together all of the Chocolate Chip Oatmeal Cookie together by mashing together with a fork.

5. Drop chunks of the Chocolate Chip Oatmeal Cookie on top of the peach mixture.

6. Bake for 18-20 minutes, or until cookie is browned and peach mixture is bubbling.
