white bean hummus

My journey of discovering health through food is one that is ongoing.  I feel it has to be in order for it to remain exciting {albeit sometimes a bit frustrating}.  Some days I feel like just when I am getting a handle on what fuels the body versus what doesn't, what foods to buy and which ones to stay away from and so on and so forth, I make some new discovery and feel like I have it all wrong.  The past few weeks I have been feeling a little defeated by food.  However, with that defeat is excitement and a drive to learn more and discover more.  Some days you may even say I become obsessed with learning more about food, where it comes from and what we are really putting in our bodies.  I can't help it, once I get hooked on something I get hooked!  You feel me?

Anyways that is why this little gem was thought up.  For the past couple weeks I have been making a real effort at changing up my lunch and actually planning them out.  I am terrible when it comes to lunches.  For breakfast I normally have a green smoothie so not much thought goes into breakfast.  For dinner I always have those planned out but for lunch I never have a clue what I am eating that day, which is terrible!  Most days I just throw a salad together but somedays I am so rushed that I don't get a proper lunch and end up resorting to another green smoothie, which is leading to me having way too much fruit {sugar!} in a day.  So my goal has been to change up my breakfast so I am not starting off everyday with sugar and to have more of a plan for lunches.  I must say I am doing really well!  So far my favorite lunchtime meal has been a turkey burger {bunless} topped with guacamole and lots of veggies with a side of homemade sweet potato chips.  I prep the meat and get the patties all put together so all I have to do is toss the burger on the grill real quick.  While I have been LOVING the guacamole on my burger I thought it would be good to change it up.  I thought hummus would be a great addition but only had white beans in the house so white bean hummus it was and it turned out fantastic.  Having the guacamole or this hummus on the burger is what really makes it such a fantastic meal.

White Bean Hummus

makes: about 1 1/4 cups

Ingredients:

1 c cooked white beans

1/2 tsp sea salt {to taste}

1 garlic clove

juice of 1/2 a lemon

4 drops hot sauce {to taste}

2 Tbsp + 2 tsp tahini

paprika

 

Directions:

1. Combine all ingredients except paprika in a food processor and blend until smooth.

2. Remove from food processor, sprinkle with paprika.  Enjoy!
