Fall is officially here you guys.  I know, I know, it was officially here last week but man this week it actually feels like fall.  On Monday it was a bit on the chilly side and the rain was drizzling; it was the perfect curl up with a cup o' joe and snuggle with Cash kind of day.  The ski resorts started getting a glimpse of the ski season ahead with snow gracing the mountains.  I find the change of each season to be exciting.  Even winter, which can get old after a while if you don't live where you can play in all that glorious snow.  Even though we live in Colorado, the mountains are not out our back door so we don't get to play quite like we used to when we were nestled in a small mountain town where playing in the snow was a must and oh so fun.  Lets not think about snow quite yet though, enjoying fall is the priority at the moment.

Onto this dish though.  I feel it is a requirement to have a few quick, easy and healthy meals in your back pocket.  Even though these types of meals are always good I find them especially useful in the fall and winter when the days are shorter, life seems even crazier and dinner time seems to be here just as soon as you wake up in the morning.  This meal falls into that category.  Another bonus is that it is meat free.  Don't get me wrong, I am totally a meat eating kind of girl but with the prices of meat so high it is nice to have a meatless meal to help the wallet out.   Am I right or am I right?  Oh and the bonus to this meal, if you are serving only 2 {like I am doing} then you will have leftovers for lunch, which you will be thankful for when lunch time rolls around.  No thought has to be put into what to eat, which if you are like me you will appreciate greatly.  It is also nice when two o'clock in the afternoon rolls around and you realize you haven't eaten, you've been spit up on and peed on at the same time and you are fading fast.  This will help you recover!

Roasted Sweet Potato and Black Bean Tacos with Goat Cheese

makes: 8-10 6" tacos


1 lg. sweet potato, peeled and diced

1 15 oz. can of black beans

1 c red enchilada sauce {I used the gluten free version of this one with a few substitutions}*

8-10 corn tortillas

goat cheese

olive oil

fresh cracked pepper

fine sea salt



1. Preheat oven to 400 degrees fahrenheit.

2. Place sweet potato on a silpat lined baking sheet.  Drizzle with a little olive oil and season with salt and pepper.

3. Roast for 15 minutes, toss then roast another 15 minutes.

4. In a saucepan over medium heat add enchilada sauce, stir until warmed.  Add black beans and sweet potatoes.  Once the black beans are warmed, remove the saucepan from heat.  

5.  Warm tortillas in oven.  Fill tortillas with black bean mixture and top with goat cheese.  Top with any other desired toppings - guacamole, salsa, lettuce, avocado, cilantro, green onions, etc.


*Note: If you are able to, make your own enchilada sauce.  It takes little time to whip up and the ingredients are much better than those of the canned variety.  Instead of vegetable or canola oil I used extra virgin olive oil.  I used onion powder instead of onion salt and added red pepper flakes/ground red pepper for a little kick.  Without the red pepper flakes I felt like it was missing something.
