Almond butter is my weakness, which 10 years ago I would have never imagined myself saying.  I was definitely a peanut butter lover, especially in smoothies with bananas and spinach.  Over the last few years though I have developed a love for the almond variety.  The problem is that it is kinda of pricey to buy so what better solution than making it myself.  I also love that if I only have a few almonds on hand I can make a small batch to get me through my craving.  You can easily add onto this recipe to create a custom almond butter.  You can add salt, cacao nibs, cacao, honey, maple syrup or whatever else your heart desires.  One of my favorite varieties is my Chocolate Chunk Almond Butter.  I love the versatility and the extra boost of protein and healthy fat.  If you have never tried making your own almond butter you must give it a try, it is super easy and comes together in less than 10 minutes.

Almond Butter

Makes: 2 cups

Ingredients:

  • 1 lb almonds
  • 4-4 1/2 Tbsp coconut oil
  • 2 Tbsp cinnamon

Directions:

  1. Place almonds in a food processor and process until almonds are broken down and oils are starting to release.
  2. Add 1 Tbsp coconut oil and process some more.  Keep adding coconut oil and processing until a consistency you desire is reached {more runny, thicker, etc.}.
  3. Add cinnamon to taste and process until combined.  Enjoy!
