Okay, I know I have said it before but I love Spring.  Right now I am going through a ready to mix it up food wise phase.  I am ready for Spring produce and wine.  I know wine is good at any time!  I just get excited to go wine tasting this time of year.  Although it may be a little harder to do that now...  because nobody will look at you weird if you bring a baby to a wine tasting, right??  I guess we need to invite some grandparents to come stay.

Blue Fig and Chicken Salad l

This salad, oh this salad.  It is by far one of my favorite salads ever and the only salad I can get myself to order when we eat at one of our favorite restaurants in town.  There are soooo many good sounding salads there too.  I just love this one so much and since we rarely eat out it makes it hard to order something different.  It is a super simple salad, but the few ingredients it features are some of my favorites... figs, blue cheese, prosciutto, chicken and a peach dressing.  Yum.

Blue Fig and Chicken Salad with Peach Dressing

Serves: 1



  • 3 slices organic frozen peaches
  • 1/2 c + 2 Tbsp extra virgin olive oil
  • 3/8 c red wine vinegar
  • sea salt
  • black pepper


  • 1 grilled chicken breast, sliced
  • 2-3 slices prosciutto or pancetta
  • 3-4 handfuls of mixed lettuce {spring mix}
  • 1/4 c dried figs, sliced
  • 1/8 - 1/4 c blue cheese



  1. Add peaches, EVOO, and red wine vinegar to a blender and blend until combined.  Add sea salt and pepper to taste.


  1. Add lettuce to plate.   Top with chicken breast, prosciutto or pancetta, dried figs, and blue cheese.  Drizzle with salad dressing and enjoy!
