This pizza was one of those clean the refrigerator out meals.  It ended up surprising my husband and I at how good it actually was.  I have since made it a few times since originally making it and we continue to love it.  I was actually a little hesitant to feed it to my husband because the pizza crust is gluten free, so I was sure he was not going to like it because it wasn't really pizza.  To my delight he liked it!  Yay!  Pizza was something I loved making in the past because you can literally through anything on pizza and it tastes so good.  It is also a great way to use up random vegetables and anything else you have on hand.  However I have pretty much cut out all gluten so I have to pretty much kiss pizza goodbye.  However, I am not an extremist in any way, I feel balance is key to life and key to not stressing yourself out.  Trust me, when I tried being perfect and extreme I became super stressed and that was not good for my body. I do indulge occasionally and just try to do it smarter, like doing it gluten free {not perfect Paleo, but at least there was no gluten!}.

I have been on kind of a buffalo kick and have been drizzling buffalo sauce on pretty much everything, so why wouldn't it be good on pizza too?  I think this is what really made the pizza good for my husband.  Grill up some thinly sliced steak, which takes not time at all, roast some asparagus, throw it on some delicious crust and you have an amazing dinner!

Buffalo Steak and Roasted Asparagus Pizza {Gluten Free}

Serves: 2 {2 slices each}

Ingredients:

  • 2 thin breakfast steaks
  • 1/4 c buffalo sauce
  • 1 heaping c chopped asparagus
  • olive oil
  • sea salt
  • fresh cracked pepper
  • 2 oz. crumbled blue cheese
  • 1 loose c mozzarella
  • truffle oil

Crust 

Directions:

  1. Preheat oven to 550 degrees fahrenheit.
  2. Add yeast and warm water to a medium sized bowl and let sit for 5 minutes.  Add flour and mix until combined.  
  3. On a floured surface press dough into a ball.  You may need to add more water or flour depending on if the dough is too dry or wet.  Let dough rest while you prep the asparagus and steak.
  4. Place asparagus on a baking sheet.  Toss in olive oil, sea salt, and pepper and bake for 5 minutes.  Once done remove from oven and set aside.
  5. Heat a grill pan over medium heat.  Add steak and cook for 30-60 seconds on each side or until desired level of doneness is achieved.  Remove and slice into thin strips.
  6. Add the steak strips to a medium sized bowl, drizzle with buffalo sauce and toss so that all pieces are coated.
  7.  Add olive oil to a cast iron griddle.  Press the dough out into a 8" x 10" rectangle on the griddle.  The dough may slightly crack as you press it out into the rectangle, if it does simply pinch it back together.  Put in oven and bake for 3-4 minutes.  You don't want the crust to completely bake but to bake enough that it can hold the heaviness of the steak without turning soggy.
  8. Add steak, then asparagus on top of crust.  Top with mozzarella and blue cheese.  Drizzle with truffle oil and return to the oven and bake for 4-5 minutes {until the mozzarella cheese is starting to brown and getting bubbly}.  
  9. Remove from oven and cut into 4 pieces.  Enjoy!
