I realize Banana Ice Cream is a thing of the past and if you are on Pinterest you have most definitely seen recipes for Banana Ice Cream floating around.  I am here to say that if you have not tried it, stop what you are doing and make some now.  It is so super simple and tastes so freaking good.  Although I love bananas and throw them in smoothies regularly I think I still doubted that the consistency would properly reflect ice cream/gelato/frozen yogurt.  I must say it does, it really does!  Like homemade ice cream right out of the ice cream maker or creamy gelato.

I first tried it about a month or two ago and have since made it a few times a week each week as an evening treat.  I am not one that usually eats anything after dinner but since having my son and breastfeeding I find that I have to have something after dinner otherwise I wake up starving, like famished.   I find this fills me up just enough and doesn't leave me with a sugar hang over the next morning.

I am so glad I finally tried this, I know that as Cash gets older this will be the perfect treat for him that I can feel good about him having.  Totally junk free.  Just toss some bananas in the freezer to have on hand when the desire kicks in to have a wonderfully delicious frozen dessert.  I have loved playing around with different combinations.  I think next up to try is Chocolate Chocolate Chip Cookie Dough.  I will post it if it turns out well, wish me luck!

Chocolate Cherry Almond {N}ice Cream {Dairy Free}

Serves: 1 {can easily be doubled or tripled!}

Ingredients:

  • 1 large frozen banana
  • 3 Tbsp full fat coconut milk
  • 2 Tbsp raw cacao
  • 1/2 tsp almond extract
  • 1/4 c frozen sweet red cherries, chopped

Directions:

  1. Place frozen banana in food food processor and add coconut milk.  Begin processing.  Scrape down the edges and break up the banana with a spatula if you have large pieces not wanting to break down.  
  2. Continue processing until smooth and creamy.
  3. Add cacao and almond extract, process until blended in.  Scrape down the sides.
  4. Add cherries and pulse until the cherries are blended in.
  5. Enjoy!
