This right here is total man food made a little healthier.  This meal was a special request from Kass.  Something about a man and his meatballs on a sub or over spaghetti.  While Kass is extremely easy to please as far as meals go and he always eats what I place in front of him, there are certain foods I no longer make or places we no longer eat that he  misses like crazy.  Meatball subs is on that list of foods.

A few weeks ago we were headed to Vitamin Cottage and I was asking him if he had any meal requests and this was it.  He wanted to know if I could make a healthier version, so I obliged and came up with this.  I must say I was super impressed with how this meal turned out.  It is not the perfect "clean meal" but it is much healthier than the alternative.  The biggest bonus though was that he loved it too.  

Even Cash enjoyed the meatballs and sauce without the spices.  It is so nice to be able to make one meal that all of us can eat.  While Cash is growing far too quickly and that makes me sad, being able to eat the same things is a bonus to him growing up.  Sometimes it can get tiring making separate meals for us and then for him.  It is so worth it though and is actually easy if you spend a little time each week making big batches of food.  Sometimes finding that time is hard.  Still though, knowing he is eating nutritious food is super important to me, so it is worth the extra effort.

I have been making some really good and different dinners lately.  Sometimes I can get stuck in a rut and go to what I know and is easy.  It was really that way for awhile while I was adjusting to having a baby, returning to work, and working on launching my jewelry line {see a sneak peak on Instagram!}.  

Here recently though I have been having a lot of fun in the kitchen again.  I am even excited to try out some canning this summer.  When you live where the produce is amazing you want to bottle that stuff up for when winter rolls around.  Wish me luck...

Chicken Meatball Pitas {Gluten Free}

Serves: 2

Ingredients:

Meatballs

  • 1 lb ground chicken
  • 1/4 c grated parmesan cheese + more for garnishing
  • 1 egg
  • 1/8 - 1/4 tsp crushed red pepper
  • 1-2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • fine sea salt

Sauce

  • 1 8 oz. can tomato sauce
  • 1 14.5 oz can fire roasted tomatoes
  • 2 Tbsp tomato paste
  • 1 white onion, chopped
  • 1 red pepper, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 c full fat coconut milk
  • dried oregano
  • crushed red pepper
  • fine sea salt
  • 1/4 - 1/2 tsp fresh cracked pepper
  • coconut oil

Directions

Meatballs

  1. Toss all the ingredients in a bowl and mix until everything is combined.  Using your hands helps to get it well mixed.
  2. Form into about 1" balls and place on a spilpat lined baking sheet.  Bake for 15 minutes or until done.  Set aside.

Sauce

  1. In a medium saucepan over medium heat add 1 tsp coconut oil.  Sauté the onions and red pepper until onions are translucent and pepper is soft.  
  2. Add garlic, cook for 1 minute.  
  3. Add all remaining ingredients, bring to a boil, lower heat to a simmer, and cover.  Let simmer for at least 10 minutes.  Can simmer for longer though!

Pitas

  1. In a medium bowl add yeast and cover with warm water.  Let sit for 5 minutes.
  2. Add in flours and mix until flour absorbs all of the liquid.
  3. Turn the dough out onto a lightly floured surface and knead for 3 minutes.  Add more flour if needed.  You want the dough to be tacky but not sticking to your hands or the counter.  
  4. Turn a bowl over the dough and let sit for 15 minutes.
  5. Turn the dough out onto a lightly floured surface.  Cut or split the dough into 4 equal portions.  Roll each portion out or stretch out using your hands.
  6. In a frying pan over medium heat add 1 tsp coconut oil.  Add one of the dough portions to the pan and cook for about 1-2 minutes on each side {until it is cooked through but still flexible}.  If you overcook them they will not be able to bend into a pita.
  7. Repeat step 6 with remaining dough portions.

Meatball Pitas

  1. Add 3 meatballs to each pita, top with sauce, and freshly shaved parmesan cheese.  Enjoy!
